This delicately sweet dark chocolate is made from the exceptionally rare cocoa beans that grow on a handful of cocoa islands ("chocolatales") in Bolivia, in the Amazon Basin, where the blue-throated macaw also lives. This bean is about half the size of regular cocoa beans, but is full of tropical flavors, flower honey, apricots and oranges.

Extremely rare trinitario beans, the raw material for this chocolate, are grown in organic cocoa gardens on the edge of Udzungwa National Park in Tanzania. This park is also home to endangered elephants, so beehives have been planted around the gardens as a natural fence to prevent roaming animals from harming the plantations.

In the coastal desert of Peru, a place devastated by deforestation, the cultivation of an almost extinct white cocoa bean began in 2007. Over the years, the orchard Piura Blanco has become one of the world’s most award-winning cocoa beans, and thanks to its tree plantations, the Piura Valley is a place full of wooded, wooded swarms of butterflies.
