Couscous is a dish of Berber origin made from hulled, unground or coarsely ground durum wheat. It is mainly used as a side dish in Arabic cuisine, although it is now popular worldwide.
It is eaten as a side dish with meat (chicken, lamb, rabbit, beef, veal) or fish, as a vegetable stew or as a garnish for various tajines, but also as a salad or starter with tomatoes, various raw vegetables and a wide variety of herbs, especially parsley, coriander and mint, according to the region and taste. Also delicious as a dessert, with milk, honey, dried fruit. Couscous can also be used in salads.
