Pumpkins have been known for about 10,000 years, originating from Mexico in Central America. More than 800 varieties are grown for food and feed.
Rich in nutrients, its fats are very valuable, being 80 percent unsaturated vegetable fatty acids, cholesterol-free, and rich in mainly di- and polyunsaturated fatty acids. In addition to its many beneficial properties, pumpkin is also a healthy source of trace minerals and vitamins. Unsaturated fatty acids have been shown to slow atherosclerosis.
