Sprouted buckwheat is an important ingredient in a raw diet. In this product, it is used as a base ingredient in a "sweet" biscuit, together with soaked walnuts and almonds. The sweet ingredient is provided by low glycaemic index dates, which do not spike blood sugar levels but provide a slow absorption time of 3-4 hours. Buckwheat is high in fibre, good for the digestive system, and contains high levels of several B vitamins, as well as vitamins E and C. Zinc, copper, manganese, calcium and magnesium can be found in it. It is gently dried at 42 degrees for 6-8 hours.
