The yeast strains used for ALEs work at a higher temperature than lager yeasts, they get the job done sooner, and there is no need for resting.
These yeasts are characterized by the fact that they produce much more esters, i.e. flavor and fragrance substances. Due to this, these drinks have a much more pronounced taste and smell.
