The result is a smooth, full-bodied whiskey with a distinctive, robust character, with notes of vanilla, caramel and ripe cherries, reflecting over 2,000 years of rye cultivation on the west coast of Denmark.
Stauning Rye contains only floor malted rye and barley.
Open fire stills create complex and deep flavors, thanks to the fact that the heated still reaches a significantly higher temperature (up to 650˚C). This causes the solids in the wash to stick to the inner surface of the copper, in the same way that a steak placed on a hot pan begins to brown. This Maillard-type reaction in the still helps create a variety of flavors such as chocolate, caramel, and roasted nuts.
