This makes the final whiskey more intense, enriched with spicy, walnut notes and sweet vanilla and sherry fruitiness beyond the usual smoothness. Taste: Intense, rich, concentrated spiciness, walnut and vanilla sweet notes, and the sherry barrel adds fruitiness. Aroma: Butterscotch, creamy-caramel notes from grain whiskey, peppery spice from pot still whiskey, and ripe fruity effects such as nectarines, apricots and apples as a result of sherry barrel ripening.
