For the production of cream honey, rapeseed honey and a little flower honey are used. Rapeseed is a very fast crystallising type of honey. Its colour is white and its crystals have a fine structure. Its flavour is enhanced by the addition of a little flower honey. It has strong antiseptic and anti-inflammatory properties. It is the least acidic type of honey and can therefore be consumed in cases of stomach acid problems.
Its mild, neutral flavour makes it an excellent sweetener, and it can be used as a healthy sweetener in all situations where sugar would otherwise be used. As it does not drip, it is recommended for children and older people.
