At the optimum degree of ripeness, the grapes of Champagne Brut Réserve are harvested exclusively by hand, without the help of rough and less selective harvesters. After hand picking, the grapes are immediately taken to the winery. Here they are selected and carefully pressed. This is followed by the fermentation of the base wines. After the final champagne is assembled, further expansion follows based on bottle storage. Champagne Taittinger Champagne Brut Réserve is then aged in the bottle for a few months and finally discharged.
