High quality, crispy capers in vinegar
Capers - or capri - are mostly used to flavor meat dishes, sauces, garnishes, game dishes, cold dishes, fish dishes, meat jellies, garnishes and some variations of solola soup.
Capers are the wilted buds of capers, preserved in vinegar, salt and oil, which have not yet opened. The dark green, pea-sized flower bud (Capparis flos) is harvested before it opens and then preserved with salt vinegar and often olive oil. The green, not too soft, closed buds are pleasantly bitter and pungent, with a characteristically astringent spice.
