Japanese green tea
Umami, green notes, sweet aftertaste.
Kōfu 光風 – Bright wind
Area:
Yoshida Tea Garden
Uji, Japan
While in China green teas are traditionally roasted, in Japan they are mostly steamed. As a result, the leaves retain their natural greenness, which lends freshness and vitalizing energy to the tea. The primary, slightly tart, soft violet flavors turn into a long-lasting sweet aftertaste over time. The exceptionally umami, fresh green character of this year's Sencha captivates you.
One of the oldest tea gardens in Uji, located around the Kōzan-ji (高山寺) temple, has been cared for and cultivated by the Yoshida family since the 16th generation, i.e. for almost 500 years. This experience spanning centuries is also reflected in their teas.
Our tasting notes:
Steamed aroma: toasted seeds, creamy, very clean green notes
Tastes, effects: Its beautiful green concoction hides complex flavors. Creamy spinach, cream, pine nuts, nettle. It opens with a pleasant bitterness and turns into a very pleasant sweet aftertaste. Typically for Japanese greens, it also evokes the atmosphere of the seas, algal notes, slight salty sensations. Complex sencha with a strong dynamizing effect.
