Located on the highest terraces of the Anoia river, the Vinya dels Fòssils vineyard has high marine sediment fossil soils. This gives the mineral content and soil composition of the grapes. Sea snails and shells, petrified by carbonates, form the basis of this sparkling wine with a high salt content.
The grapes of the Vinya dels Fòssils plantations come from the selection carried out in 1888 by Manuel Raventós Domènech. The creator of the Penedès sparkling wine recipe chose these three indigenous grape varieties, Macabeu, Xarello and Parellada, with Manuel Raventós experimenting with separate small unique plots. He cut canes from the stocks that produced the best quality and created new stocks with the cuttings.
