Blanc de Blancs is a traditional champagne with a typical character that faithfully reproduces the characteristics of the location. Vinya del Llac, a vineyard over 40 years old, which allows the production of a structured, fresh and complex champagne base.
Biodynamic.
It is made only from indigenous grape varieties: 40% Xarello, 35% Macabeu, 19% Parellada. 6% Malvasia de Sitges
This new grape varietal composition, complemented by the ancient Malvasia de Sitges grape variety found on site, adds another dimension to this iconic Spanish sparkling wine.
The Vinya del Llac vineyard has a northern exposure. The upper layers of the soil are clayey, which slowly allows water to pass through the vines during the vegetative cycle, while below the surface we find calcareous gravelly bedrock that limits the water reserve, so the vines of the most significant plots are structured and mineral. The balancing effect of the temperature of the lake moderates the climatic conditions in this symbiotic vineyard, avoiding excessive heat, which favors long ripening. Three indigenous white grape varieties: Macabeu, Xarello and Parellada make it a true Catalan Blanc de Blancs.
