Badacsony's flagship grape variety is handled with special care, with severe yield restrictions, several harvest dates and rapid processing. It is fermented spontaneously in barrels and tanks and then matured for 8 months. Neutrality, minerality, wild flowers and freshly macerated aromas of basalt stones characterise this wine. It is an unforgettable experience with Balaton fogas, but it is also ideal with cabbage dishes, roast pork and aged cheeses.
The wines produced on the northern shore of Lake Balaton carry the flavours and aromas of the Balaton sunshine, the unique microclimate and the basaltic soil, which are reflected in every sip. The main grape varieties of the Váli estate in Badacsonyörs are kéknyelű (with Buda green straw), Olaszrizling, muscat ottonel and pinot noir. All activities related to viticulture and winemaking are carried out locally. Harvesting is done by hand, thus meeting the requirements of artisan wine. Reductive and new barrel-aged wines are sold exclusively in bottles.
