Yealands Estate Single Block Organic Sauvignon Blanc 2024 750ml

When making the wines of the Single Block series, the aim is to display and harmonize fruitiness and terroir together. Tucked between the winery and the coast, organic block vineyards create an expressive Sauvignon Blanc with heady notes of guava, pink grapefruit, green herbs and passion fruit. In the taste, passion fruit and pineapple, which move minerals.

The certified organic fruit of block I2 was de-stemmed, cooled and finely pressed. The juice was cold-settled for 72 hours, and then the clear juice was decanted. A long, cool fermentation followed with special Sauvignon Blanc yeast, which helped capture and enhance the characteristic fruity flavors of the organic block. After fermentation was complete, the wine was racked, stabilized and filtered before bottling.
